I forgot to comment on my super week of banana eating. I ate something like 21 bananas in 8 days, culminating with a 4 banana day yesterday, the last day of June.
Aldi had buy one get one free because their bananas were almost overripe. Luckily, I found two bunches that were juuuuuust right at that perfect level of ripeness. Of course, I had to eat fast. It also helped that I rediscovered putting bananas in the fridge to slow down the ripening process. The key is putting them in there at the right time. Without using the fridge this week, I would have been forced to freeze 5 or 6 overripe bananas for smoothies and I already have a good supply of those.
I’ve been mixing a spoonful of spiced apple butter with a spoonful of peanut butter and a little bit of soy milk. I mix that up real good in a bowl and then cut up a banana or two and throw it in there. Yum! Unfortunately, we’re out of both, apples and bananas right now.
